What it usually turns out to be
On a gas oven, a weak igniter that glows but never draws enough current to open the safety valve is the classic. On electric and dual-fuel, it is an element that has gone open circuit or a probe reading high so the control shuts off early. All three are measured — current draw, continuity, probe resistance against temperature — rather than guessed at.
A cavity that goes cold mid-bake usually points at a thermal switch or cooling fan dropping out as the trim warms up, or a relay on the control losing contact when hot. It is diagnosed by running a full cycle with a meter on it, which is slower than swapping a board and considerably cheaper than swapping the wrong one.
That is airflow: a convection blower that has slowed or stopped, or a door that no longer seals so cool air is drawn across the front. Hinges sag on heavy doors and pull the gasket away from the frame at the top corners. A hinge set and a gasket often cure a cavity that has been called “unusable” for a year.
